Low Carb Herb Chicken

Low Carb Herb Chicken
Organic, Pastured Raised Chicken Breasts or Thighs
Italian Seasoning (usually found as a premade mix of Rosemary, Thyme, Oregano, Basil)
**Option: Curry Powder or Thai Curry Powder with Italian Seasoning or use as an alternative.
Garlic Powder
Paprika (optional)
Sea Salt
Ghee or Organic Butter
Option: 1/2 – 1 C. Organic Coconut Cream
½ – 1 c. Filtered water
**Use organic spices when possible.

  1. Preheat oven to 350 degrees.
  2. Clean chicken, cut if necessary.
  3. Place in pan, skin side up.
  4. Sprinkle with sea salt – not too much but you want to get a nice layer evenly across all of the chicken.
  5. Sprinkle evenly with Garlic Powder… if your family loves garlic, add a generous amount!
  6. Then sprinkle on Italian Seasoning. You definitely want to cover most of the chicken and not see much skin underneath the seasoning.
  7. Sprinkle Paprika over.
  8. Add Filtered Water to the bottom of the pan; amount depends on pan size. You want about ¼ inch of water.
  9. If you’re using the “Coconut Cream” you can mix or blend it with filtered water to desired consistency.  Pour over chicken …
  10. Place a few “chunks” of butter or ghee on top of the chicken in a few places.
  11. Put chicken in oven… bake for about 35 minutes.
  12. Cut into chicken at that point and if it is slightly pink, turn on broiler, baste with the juices in the pan and continue cooking under broiler, with door cracked, for about 10 minutes. Chicken is cooked at 170 degrees. Just be sure to watch the skin as it can burn quickly under the broiler.  Goal is to get the skin to a nice golden brown color.

This is a great ketogenic diet or keto nutrition recipe. It can also be used on a paleo or gluten free meal plan. You can adjust the amount of Coconut Cream and/ or Ghee or butter. You can pair it with low glycemic vegetables such as spinach or broccoli or add a sweet potato if you need a higher amount of starch.
