½ – 1 c. Mashed, Cooked Sweet Potato
2 – 4 Whole Eggs
1-2 tsp. Cinnamon
¼ – ½ tsp. Nutmeg
¼ – ½ tsp. All Spice
1-2 pinches of salt
Coconut Oil, Ghee or Butter for cooking

  1. Bake sweet potatoes – best to do this the night before.
  2. Blend together Sweet Potatoes, eggs and spices
  3. Heat pan with oil or butter
  4. Cook 3-5 minutes on each side…
  5. Serve with butter, nut butter and/ or dash of maple syrup

Note: The lesser amount of ingredients is for a “single” recipe and makes about 12 small pancakes.  The larger amount is for a double recipe.  Choose accordingly based on family size and what you’re using for next day
